  • Prepare the Chicken:
    • Flatten the chicken breast by gently bashing it with a rolling pin.
    • Dip the chicken into the beaten egg and coat thoroughly with the panko breadcrumbs.
  • Cook the Chicken:
    • Place the breaded chicken onto a baking tray and bake in a preheated oven at medium heat (180°C/350°F) until golden and fully cooked through (about 20 minutes).
  • Prepare the Cheese Sauce:
    • In a small saucepan, melt 55g of cheddar cheese with 25g of Philadelphia Light.
    • Add a splash of milk and a dash of nutmeg. Stir until smooth.
  • Assemble the Parmo:
    • Spread the cheese sauce over the cooked chicken.
    • Sprinkle 30g of cheddar cheese on top and return to the oven for several minutes until the cheese is melted and bubbly.
  • Serve:
    • Plate the chicken parmo alongside chips and a fresh salad.
    • If desired, add 2 syns of mayonnaise to the salad for extra flavor.
