- Prepare the Chicken:
- Flatten the chicken breast by gently bashing it with a rolling pin.
- Dip the chicken into the beaten egg and coat thoroughly with the panko breadcrumbs.
- Cook the Chicken:
- Place the breaded chicken onto a baking tray and bake in a preheated oven at medium heat (180°C/350°F) until golden and fully cooked through (about 20 minutes).
- Prepare the Cheese Sauce:
- In a small saucepan, melt 55g of cheddar cheese with 25g of Philadelphia Light.
- Add a splash of milk and a dash of nutmeg. Stir until smooth.
- Assemble the Parmo:
- Spread the cheese sauce over the cooked chicken.
- Sprinkle 30g of cheddar cheese on top and return to the oven for several minutes until the cheese is melted and bubbly.
- Serve:
- Plate the chicken parmo alongside chips and a fresh salad.
- If desired, add 2 syns of mayonnaise to the salad for extra flavor.
