  • 1 teaspoon of cinnamon
  • ¼ cup (4 tablespoons) of granulated sweetener (I use erythritol)
  • 1 small carrot, grated and squeezed of excess moisture
  • 2 tablespoons of lemon juice
  • 30g (1 oz) of sultanas
  • 6 tablespoons of fat free vanilla Greek yoghurt
  • 2 large eggs

for the icing:

  • 3 tablespoons of fat free vanilla Greek yoghurt
  • 2 tablespoons of low fat cream cheese
  • 1 tablespoon of icing sugar
